Gala Apple Vegan Salad Jar

Serves 2

Ingredients

Dressing
130g cashews, soaked overnight and drained
Medium sized bunch basil
4 large sprigs tarragon
½ clove garlic
Juice 1 lemon, plus a little extra if needed

8-10 tbsp water to loosen
Salt and pepper

1 tin chickpeas, drained
1 Gala apple, cut into matchsticks
1 large carrot, grated or spiralised
Few cos lettuce leaves

Method

  • Add all dressing ingredients to a blender with 8 tbsp water and blend until smooth. Add a little more water if needed to achieve a creamy consistency. Adjust seasoning to taste
  • Mix chickpeas with apple matchsticks, adding a squeeze of lemon to stop the apple from going brown
  • Spoon the dressing into 2 jars, top with chickpeas and apple matchsticks, followed by carrot. Finish by sliding the cos leaves down the side of the jars
